How to make rice tofu in Guizhou
Preparation materials: 200g rice, hydrated lime 10g, moderate spinach juice and moderate water.
1. Wash the rice and soak it in water for 8 hours.
2. Put the slaked lime into a bowl, add water and stir well.
3. Add 400 ml of water to the soaked rice and grind it into rice slurry.
4. After the rice slurry is ground, pour it into the pot, add spinach juice and hydrated lime water and stir well.
5. Cook on low heat until the rice paste becomes sticky, and keep stirring clockwise when cooking.
6. Pour the cooked rice slurry into the mold and cool it.
7. When the rice slurry is cooled, it becomes rice tofu. Cut it into pieces with a knife and you can eat it. If you can't finish eating, you can add water and put it in the refrigerator.
