History of Tan Yan Kee Dumplings

In 1920, a Huangpi man named Tan Zhixiang came to Wuhan to make a living, and with the skill of making dumplings in his hand, he made a stretcher like the one he used as a peddler, picking the stove in front and putting pots and bowls in the baskets in the back, and with the skins, meat fillings, and seasonings, he started to be an itinerant peddler at the night market on Sanshu Street.

The night market was far from the scale of today's, a few families set up a few tables, put a few benches, sell some rice wine and dumplings and so on, it became a market. Tan Zhixiang went to the night market at night with a stretcher, and during the day he worked hard on the dumplings - he blended beef into the pork filling to make them fresh but not greasy.

Sanshu Street is the busiest area of Hanzheng Street, gathered merchants from all over the world, Tal Zhixiang dumplings, called Chaos in the north, the Guangzhou people called Wonton, Sichuan people called the copious hand, traveled all over the world merchants basically have eaten. The dumplings are filled with beautiful soup and cooked at the night market, which has gradually made a name for itself.

More people came to eat, Tan Zhixiang called his son Tan Burgundy Mountain will "talk about Yanki" to the state, to become a private party manager who only enjoys the right to honorary management.

Time crossed into the 1970s, the guests of the "Tan Yanji" from Liji South Road to Liji North Road, expanding into more than 100 square meters of store, and in the eighties carried out a renovation.

The renovation was to create an elegant room in the original hall, with a capacity of about 20 people, round tables and soft leather seats, where high-class dumplings were sold. The high-class dumplings, which are several times more expensive than the regular mushroom and shrimp dumplings, were introduced after Tan Yan Kee expanded its product line to include chicken and fish dumplings, among other varieties. The hall is more of a reception function - receiving leaders at all levels of inspection and guests from inside and outside the province, it is difficult to empty seats in the hall, customers are standing with their bowls, people crowded.

There are also many celebrities who come to "talk about the Yanji", and Ding Zhibin has seen Yan Shunkai in the store. Local celebrities are also loyal customers of the restaurant, such as Zhang Zhiwei, who sings the Hubei drum, who comes every two or three days to eat a bowl of chicken dumplings, and then sits in the store to chat with the staff and get acquainted.

After 1985, "Tan Yanji" second renovation, borrowed from the decoration of the Dehua House, the store became antique, highlighting the characteristics of the old, but also expanded the variety, adding celery pork, cabbage pork and pickled pork and other seven or eight varieties, "is still worried about the sale, a lot of people are worried about the sale. only worry about making but not selling, many people come to the door to eat."

In order to increase sales, Ding Zhibin brought a set of teams to the factory school to set up points to sell. He will be two or three days in advance in the school posted notices, write "talk about Yanji" to sell what products, when to close the stall, about a few days and other information, to the day of the sale, the open-air shelves on the board, burned stove, dumplings are now doing now sell. Qiaokou District of Wuhan integrated material factory, Gutian two roads and twenty-nine schools have sold, many people do not eat at noon waiting for us to stall.

Entering the nineties, the catering market was revitalized and opened up, and dumpling stores blossomed all over the place, and under the pressure of competition from the same industry, "Tan Yan Ji" was no longer in vogue.

In 1989, Ding recruited the retired "King of Dumplings" heir to the company, Mr. Tan Gengshan, as a technical consultant. On the basis of the integration of tradition, the company developed more than ten kinds of dumplings, including mushroom dumplings, shrimp dumplings, chicken dumplings, crab dumplings, etc., to meet the needs of different customers' tastes, and in 1989, the shrimp mushroom dumplings were honored as a high-quality product of Wuhan City.

In February 1993, in order to meet the needs of the opening up of the country, Tan Yan Ji Dumpling House introduced Taiwanese businessmen to open a "Taipei Matador Fast Food Restaurant Co.", which was a breakthrough in the introduction of foreign investment in the Qiaokou commercial system at that time.

In early 2000, the People's Government of Qiaokou District and the District Business Committee coordinated the agreement between the "Tan Yan Ji" Dumpling House and the Taiwanese businessman to take back the store.
