What is solid liquor?

At present, the production methods of liquor stipulated by the state are: solid method, liquid method and solid-liquid method, and many liquors are solid-liquid combination method.

Solid-state brewing method is made of sorghum, rice, glutinous rice, corn, wheat and other raw materials by solid-state saccharification, fermentation and solid-state distillation, without adding any non-self-fermented aromatic substances such as edible alcohol, flavors and fragrances, which is very demanding.

Liquid brewing method is a kind of liquor made from grains, potatoes, molasses, etc. by liquid fermentation, distillation into edible alcohol, and then serial production, blending and blending. This is the use of modern alcohol to produce white wine that meets the quality standards. Because of its advanced technology, it is also called new technology liquor.

On the one hand, the difference between them lies in the raw materials for brewing. The solid brewing method cannot add other substances, while the liquid brewing method is mostly "three refined and one water" blending.

Solid liquor is better for the following reasons:

1. The wine brewed by solid method is better in taste and more mellow than that brewed by liquid method. At the same time, liquor is pure and fragrant, and hops are long.

2. At the same time, the brewing time of solid method is relatively long, ranging from two to three months, while the brewing cycle of liquid method is relatively short.

3. At the same time, solid liquor is generally pure grain liquor, and the raw materials will be wheat, corn, rice, sorghum and other food crops; Liquid liquor is blended liquor, and its raw materials often use molasses, potatoes, grain and so on. Solid liquor generally does not add alcohol, while blended liquor often adds alcohol.
