Slate rice (a traditional precious food in China)

Slate rice is one of the traditional precious grains in China, and its history can be traced back to the Tang Dynasty. The production method of slate rice is very unique, which requires slate and stone mill, so it is also called "slate grinding rice". Slate rice is known as a "rare treasure" because of its large grain, white color, strong taste, soft waxy and rich nutrition.

Steps of making stone rice

Preparatory work/about to start work

First of all, you need to prepare slate and stone mill. Slate should be smooth, moderate hardness, no cracks and depressions. The stone mill requires the grinding disc and stone to be clean and free of impurities.

Washed rice

Soak fresh rice in water, wait for the rice to absorb enough water, and put it into a stone mill to grind it into rice grains. In the process of grinding, it is necessary to continuously add appropriate amount of water to make the rice grains more delicate.

Stone steamed rice

Put the ground rice into the slate, cover the pot, and then cook it with fire. The cooking time should be well controlled, which usually takes about 20 minutes until the rice grains become soft and waxy.

Slate drying rice

Pour the steamed rice into the slate, spread it out with a shovel and dry it. The drying time depends on the weather, and it usually takes about 2-3 days until the rice grains are completely dry.

Slate rice milling

Put the dried rice into a stone mill and grind it into slate rice with a stone mill. In the process of grinding, it is necessary to continuously add appropriate amount of water to make the rice grains more delicate.

Edible method of slate rice

Slate rice can be used to make all kinds of delicious food, such as glutinous rice, glutinous rice paste, glutinous rice balls and so on. Among them, glutinous rice is the most common way to eat. The steps of making glutinous rice are as follows:

Prepare materials

Slate rice, water and salt.

Washed rice
