Farmers pure grain vinegar practice

Traditional vinegar production process with rice bran vinegar production process is: rice bran cake → crushed → into the tank → sealing tank → add color → drenching vinegar → steaming → rice vinegar

① Crushing, mixing Crush the rice bran cake and then grind it finely, sieve it and make it into bran cake powder. Every 300kg bran cake powder with 200kg of water, fully mixed, so that the humidity is consistent.

② into the tank will be divided into 4 parts of the above bran powder, each add 200kg fresh lees (23 ~ 30 ℃), mix well, into the tank, covered with rice hulls 5kg or so, the next 4d, repeated every day to change the tank and add alcohol and lees, and then covered with rice hulls. 5d later, still turning the tank.

③ Seal the tank After turning the tank, use clay to seal the mouth of the tank, after 7d, pry open the clay, turn the tank once more, turn and seal the tank, after that, turn it once every 15d and 30d, and finally seal the tank.

④ Add color Before dripping vinegar, add 4-5kg of fried dry indica rice flour per 00kg of raw material, mix it with appropriate amount of water and add it into the raw material.

⑤ Vinegar drenching Put 4 tanks of raw materials into vinegar drenching tank in 6 times, drench the vinegar, first plug the drain hole of vinegar drenching tank, and then drench 200kg of water in each tank, and open the hole to release the vinegar after a period of time. After flowing, add 250-300kg water again, continue to pour vinegar, pour until basically no vinegar flavor for this.

6 Steaming Add 2.5% salt of vinegar water into the vinegar liquid, then pour the vinegar liquid into the pot for steaming and cook it until the salt is dissolved, which is made into vinegar.
