The marinade formula of tofu is as follows:

Ingredients: soybeans, dried mushrooms, dried fungus, day lily, eggs.

Accessories: onion, starch, salt, soy sauce.

1, soak 250g soybeans with clear water one day in advance, add 3kg of clear water to half a catty of soybeans, and mash them with a pulverizer for later use.

2. Fine gauze filtration. In the process of filtration, push, pull and squeeze gauze with silica gel shovel, or directly squeeze it by hand, which is convenient to accelerate filtration.

3. Pour the filtered slurry into the pot for heating and keep stirring quickly. Turn to medium heat after the first boiling, skim the floating foam after the second boiling, and turn to low heat after the third boiling.

4. Pour the tofu king, that is, a bag of glucono-delta lactone, into the bottom of the container that will be poured into the cooked soybean milk. Pour a little water into the container to dissolve the tofu king, stir well, immediately rush into the cooked soybean milk, find a lid enough to cover the container, and wait 15-20 minutes for solidification.

5. Soak dried mushrooms, dried fungus and day lily one night in advance, soak them in mushroom water for later use, cut the above ingredients into small pieces with scallion, break up two eggs, and mix half a bowl of water starch for later use.

6. Put cold oil in a hot pot, add chopped green onion and stir-fry slowly. Then add day lily and mushrooms in turn, pour soy sauce along the edge of the pot, add black fungus, add mushroom water immediately after the fragrance comes out, and then see how much water is needed according to the amount of ingredients in the pot. Then, carry out the seasoning process, add two spoonfuls of salt, then pour in half a bowl of water starch to thicken, and then add the egg liquid. Don't turn over the egg liquid after it is put into the pot.
