In my hometown, the most important festival of the twelfth lunar month is the eighth day of the twelfth lunar month, also called the twelfth lunar month. Every year on Laba Festival, every household cooks a large pot of delicious Laba noodles. There is a saying in my hometown that "red and white radish is like a knot in one's heart, which makes you eat Laba". "A knot in one's heart" is a local dialect in my hometown, which means that the first thing to eat Laba noodles is "Laba Sao Zi", which is a platform to show the ingenuity and cooking skills of girls' daughter-in-law. The "Laba Sao" in my hometown is very particular about cooking. Eight kinds of vegetables, such as pork, carrot, white radish, cabbage and tofu, are cut into little finger-sized squares (also called "bumps"), and then mixed with seasonings such as green onions, garlic sprouts and fennel, and stir-fried with slow fire, which is mellow and delicious.

If you do a good job of "Laba Saozi", you should also roll Laba noodles. In my hometown, a new wife or a little girl will be laughed at if she doesn't slap her face. First of all, the dough should be stirred evenly and the hardness should be moderate. When rolling, it should be steady and flat, and the force should be even. First loosen and then tighten, then slow and then fast, and then push rhythmically to roll the dough into thin slices. Then sprinkle a little flour on the spread-out pages and fold them layer by layer. When cutting with a knife, the tip of the knife stays on the case and the handle is slowly lifted. With the rhythm of "dong, dong", the surface can be cut into strips or diamonds. Then boil the water, take out the noodles, put them in a bowl, pour in the pre-fried "Laba Sao", and a bowl of Laba noodles with good color, fragrance and shape will be served. If you drop a few more drops of red oil into the bowl, it will make your mouth water, eat as much as you like, and you will not be satisfied after eating.
