What is grinding bean curd brain?
Grinding bean curd is an ancient traditional handicraft skill. On the 25th day of the twelfth lunar month, people have the custom of grinding bean curd. Grinding bean curd refers to the whole process of making tofu, while hipsters call it "making dried tofu". In fact, it is not only "getting" the ground, but also going through dozens of processes to become tofu.
South tofu is made of gypsum. Because of its high water content, its texture is tender, with a water content of about 90%. North tofu is mostly made of brine or acid paste, with less water content and older texture than south tofu, with water content of about 85%. However, because of its low water content, tofu has a stronger taste, a tougher texture and is easier to cook.
