Full of the old flavor of nostalgia in southern Fujian.

In southern Fujian, many families will fry their own spiced rolls on holidays.

Mix lean pork with onion, water chestnut and potato powder. Stir well, roll with bean bags and fry in oil pan.

When eating, cut into small pieces, with spicy sand tea, red hot sauce, mustard, radish acid, coriander, sweet sauce and other spices, delicious.

Fried jujube (z m 40)

Fried dates can be divided into sweet and salty ones. The sweet fried dates in Maxiang, Xiang 'an District are the best, sweet, soft and tough. "Huangzehe Peanut Soup Shop" has the best salty jujube, which has the flavor of fried jujube and leek box, and has a unique taste.

Because the stuffing of fried jujube buns is sweet and salty, some people describe it as if it has not seen your family for a long time, with joy and tears. The golden appearance makes people fondle admiringly, while the soft appearance makes people want to stop.

In many old streets in southern Fujian, it is easy to find traces of "fried dates" in stalls that make fragrant fried foods.

Caiguo

The vegetable pot is made of rice pulp and white radish as the main raw materials, steamed into cakes and fried. After frying, the vegetable cake is crisp outside and tender inside, with golden skin and slightly burnt.

The golden skin is wrapped in peanut powder mixed with white sugar, garlic paste and onion.

Small in size, it looks like a crescent moon. When fried, it looks like a bright gold ingot from a distance. You only need two bites to eat one.

A cake with blessings.

Bowl cake

Bowl cakes in southern Fujian are actually rice cakes, all of which are ground into powder with indica rice and steamed with sugar. The difference between rice cakes and rice cakes is that rice cakes are steamed in a whole steamer, while rice cakes are steamed in a small bowl with rice paste inside, so they are called rice cakes.

Bowl cake is a kind of food that is always available during worship, and it is also a necessary pastry during the New Year. Because its production process needs fermentation, it has the meaning of "making a fortune", "making a fortune" and "making a fortune", and has placed good wishes on it.

I often hear from my elders that just a bowl of cake will do. "Laughter" refers to the smile produced by fermentation and expansion when steaming. It tastes soft and waxy, not greasy, full of aroma and full of taste buds.

Xinbei pancake

Minnan folk food is a strange thing to many young people, but it has a history of hundreds of years.

Ancient people always took this thing with them when they were on the road. As dry food, it is not suitable for corruption, cheap, sweet and full.

As for the origin of its name, it looks like the alphabet cup in a temple, so people naturally named it the alphabet cup cake, and there are also love cakes in Xiamen or other places.

tortoiseshell

Turtle cake is a kind of delicacy of Han nationality in Fujian. There are many cakes used by Minnan people to worship-red turtle cakes, rice cakes, fat cakes, inch dates, red circles, fried dumplings, fried dates, etc., but only red turtle cakes are stuck on handicrafts because of their suppression of turtle patterns. The apparatus for suppressing turtle pattern is called tortoise shell printing, and engraving tortoise shell printing is a special process.

The appearance of "tortoise shell" is particularly interesting, quite like tortoise shell. Turtle is the representative of longevity, which means longevity and health. Many Minnan people also regard the "turtle nest" as the "mascot" on the Chinese New Year dinner table.

Before you go to the steamer, hold the turtle shell with fresh sugarcane leaves. After steaming, the turtle shell will give off the fragrance of sugarcane leaves.

In Quanzhou, the sweet rice cake made of sugar is also called sweet cake, with a red seal on it, which symbolizes "rising year by year".

Sweet glutinous rice is the main raw material. Shaped like a full moon, sweet and delicious. There are yellow and white, symbolizing gold and silver. Add white sugar to the white sweet cake and brown sugar to the yellow sweet cake.

In addition to enrichment, I also wish the family a sweeter and happier life in the coming year.

Eating jiaozi is also called Yuanxiao, and some places are called Tangyuan and jiaozi. It is said that eating Yuanxiao began at the end of the Spring and Autumn Period and was called Zi Yuan in the Song Dynasty, which means "Tuan Tuan Yuan Yuan".

A scholar in the Song Dynasty said that this kind of food was "wrapped in glutinous rice flour and bathed in fragrant soup", and praised it with the word 16: "A little glutinous rice flour, a little sugarcane paste; Bathing in the water is sweet and fragrant. "

At eight o'clock in the morning, there will be the knocking of peanuts and sesame stuffing in the old shop that makes Yuanxiao.

Wrap rice with peanut sugar stuffing and knead it into jiaozi. Cook in a boiling pot until it floats in a bowl. Eat with sugar. Sweet and smooth, delicate and soft, the stuffing is clear and delicious.

The taste of hometown candy

Gongtang

Tribute sugar is a traditional specialty unique to southern Fujian. Through traditional folk crafts, it "beats" the first-class peanuts, sugar and maltose with wooden sticks. "Da" is called "Gong" in Minnan dialect. Call it tribute sugar.

It is also said that the name of "tribute sugar" comes from the fact that it was once a royal tribute for folk pilgrimage, so it was named "tribute".

Tribute sugar is refined from peanuts, sugar and maltose. Among them, Quanzhou tribute sugar, Jinmen tribute sugar and Zhangzhou white water tribute sugar are all representatives of Minnan tribute sugar.

Roasted peanuts are mixed with pure maltose in a high proportion in the most fragrant state, and then they are manually mashed and wrapped, then they are kneaded, soaked, flowed and cut into pieces to make them crisp and delicious.

Garlic branch

The first time I saw the "garlic branch", many foreigners would think it was Tianjin Twist, but the "garlic branch" of Shishi was much smaller than Tianjin Twist.

"Garlic Branch" is a fried snack in southern Fujian. This is a kind of food fried with flour and sugar paste. Because it is wrapped in sugar and garlic, it looks like a branch, so it is called "garlic branch".
