How do you grill a whole chicken over charcoal?
The secret to this spicy grilled chicken is the Indian-style sauce made with a variety of spices; the marinade doesn't have to be very long; the time it takes to marinade the chicken with the charcoal preheat is enough.
Ingredients
1/2 teaspoon curry powder, 1/2 teaspoon crushed cayenne pepper, 1/2 teaspoon salt, 1/4 teaspoon ginger powder, 1/2 teaspoon red chili powder, 1/4 teaspoon cinnamon powder, 1/4 teaspoon turmeric powder, 2 tablespoons water, 4 skinless, boneless chicken breasts
How to do it
1. Preheat the grill on high heat.
2. In a medium bowl, whisk together curry powder, crushed chili, salt, ginger, chili powder, cinnamon powder and turmeric powder along with water to make a sauce. Rub the sauce into the chicken, place on a plate, cover, and marinate for 20 minutes.
3. Brush the grill grates with oil and place the chicken on the grill for 6-8 minutes on each side, until juices do not run when poked with a fork.
