Is there any carcinogen in moldy bean paste?

Identification method
(1) Nuts such as peanuts, melon seeds, hazelnuts and pine nuts turn yellow, black, bitter and wrinkled. Peanuts turn yellow after peeling off their red clothes;
(2) Yellow-green mold grows on the surface of grain and corn, or it is damaged, shrunk and discolored;
(3) When buying tofu and bean paste, if the package is damaged and the bottle cap floats, don't buy it;
2, moldy fruit
When the fruit begins to rot, bacteria will multiply in large numbers, producing toxic substances such as patulin.
3, eggshell long spots
If the eggs are not well preserved, such as getting wet or wet, they are easily attacked by bacteria. At this point, the surface of the eggshell will be moldy and black spots will appear, and this kind of egg should be thrown away directly.
Only the eggshell is moldy, and the inside of the egg is good and can't be eaten! Because there are thousands of tiny holes in the eggshell, although there seems to be nothing inside the egg, in fact, bacteria may have entered the egg through the holes.
4. Bitter sweet potato, germinated potato, red sugarcane
(1) Sweet potato will be attacked by black spot pathogen and mildewed when it is stored in humidity;
(2) After the potato germinates, there will be a lot of toxic substance "Solanum nigrum" around the bud hole, which is a neurotoxin that can inhibit the absorption center;
(3) Cladosporium sp. will appear on red sugarcane, and its metabolite 3-NPA can cause strong neurotoxicity and even death;
Can I eat the moldy part after it is removed?
The answer is: no! No mildew ≠ no mildew!

The "moldy part" we see is actually the part where the mold mycelium is fully developed and formed. Near it, there are already many molds invisible to the naked eye.
2, high temperature can't kill
High temperature heating can indeed sterilize and remove many molds, but it may have no effect on some molds and toxins. For example, aflatoxin will decompose above 280℃. Even if sterilized at high temperature for 20 hours, it may not be completely removed.
3. Not even at home.
The spores of mold can float in the air, so even if they are not exposed to mold, there may be allergic or aspiration symptoms. So if you find moldy food, please throw it away quickly.
How to prevent food from becoming moldy?
1, fruit
Wash the fruit, dry the water on the surface with a dry towel, then put it in a fresh-keeping bag and put it in the refrigerator. It can be preserved for a long time, and it is best to eat it as soon as possible.
2. Soy sauce and vinegar
Drop a layer of sesame oil in the soy sauce bottle and add a little sesame oil or peanut oil in the vinegar bottle to isolate the air and prevent mold growth.
3. Sausages and bacon
Dip a cotton swab in a little vegetable oil or sesame oil and spread it evenly on its surface to prevent mildew.
4. Rice
The best way to prevent rice from being damp and moldy is to store rice in a well-sealed container to avoid frequent contact with moisture in the air, which can effectively avoid signs of mildew and moth-eaten.
5, seafood dry goods
Seafood, such as dried fish, dried shrimp, scallops, mussels, etc. It is easily affected by temperature and humidity during storage. You can peel some garlic and cover it tightly under the jar for a long time.
6. tea
In summer, tea leaves are prone to mildew. If you put the tea leaves in a hot pot and dry them for about 10 minutes, they will still have a fresh taste after several days.
