Noodle making process
Ingredients: 300g all-purpose flour, 132g water
Production process:
1. First, we pour the flour and water into the mixing bowl of the noodle machine.
2. Set the noodle machine timer for 5 minutes and turn on the 1 gear. When the countdown ends, the noodles will be ready.
3. After kneading, let’s take a look at the condition below. Because this is a very hard dough, the dough will be torn into pieces under the strong stirring of the dough hook, so it is normal for the dough to look crumbled.
4. Take out the kneaded dough, knead it into a ball, then divide it into two parts, and then press the dough.
5. Before pressing the dough, use a rolling pin to roll the dough slightly thinner, which will make it easier to press.
6. Install the noodle press accessory on the noodle machine. For the first time pressing, set the thickness of the noodle press to 8 (the thickest level). Pass the dough through the noodle press and press it into thin sheets. Because the dough is very hard, the first dough sheet may be rough and have jagged edges. We can fold the pressed dough sheet in half and press it several times. After pressing it a few more times, the dough will become very smooth.
7. Because the dough sheet will continue to be thinned and will become too long, so before the final pressing, we cut the dough sheet into two halves and press them separately, which will make the operation easier.
8. At this time, we can choose the thickness we want for the final pressing. The smaller the selected number, the thinner the pressed noodles will be, and the thinner the final noodles will be (I chose level 3 here).
9. Replace the accessories of the noodle machine with a fine noodle cutter. The slimming machine also uses low speed to pass the dough through the fine noodle cutter and cut it into thin noodles.
10. In this way, delicious and chewy handmade noodles are made! It's best to cook it freshly. If you make too much and can't finish it, you can sprinkle some dry flour to prevent it from sticking, then seal it and put it in the refrigerator for quick freezing. You don't need to defrost it when cooking, just put it in boiling water and cook it. Or sprinkle with dry flour and dry in the sun. After drying, it can be stored for a long time.

I have tried a variety of flours in the supermarket. Some only need to add 120 grams of water, while others need to add 140 grams of water to knead them into a suitable hardness. noodle. Therefore, when you make it for the first time, you may need to adjust the amount of water according to the actual situation. If the noodles are very dry and crumbly, and cannot form a ball at all, you need to add more water. On the other hand, if the dough is too soft, add more flour.
2. The noodles used for making noodles must be very hard. If the dough is soft, the noodles will not only taste bad, but will also stick together very easily. Therefore, the dough should rather be hard than soft. It doesn't matter if the dough is very hard and rough (as long as it can be formed into a ball), it will become very smooth if you press it with a dough press a few times.
3. The noodles made from 300 grams of flour are enough for two people. If you want to make more at one time, you can increase the flour and water proportionally. But because the dough is very hard, when making noodles, the dough should not be kneaded more than 500 grams of dry flour at one time. If you want to make more dough, you can knead it in batches.
