1. Material: 500g of flour (medium gluten), one egg white, about 180g of cold water, 2g of salt, 0.5g of edible alkali (optional), and countless cornmeal (even if none).

2. Add salt to the flour, stir well, add egg white, add edible alkali to water to melt, and then start adding water. Don't add it all at once, because the water absorption of flour is different and the water consumption may be different. Add it several times until the noodles can be agglomerated to form rough dough, and the sealing relaxation is 15.

3. Knead the dough every 15 minutes.

4. Repeat kneading for 3-4 times, and the dough will become moist and smooth. Of course, if you have time, it is better to rub it several times. Don't rub it after waking up for the last time.

5. Roll the dough thin.

6. Roll it into a large sheet, then fold the dough back and forth, fold it back and forth, and sprinkle a layer of corn flour (if there is no corn flour, it is ok to sprinkle dry flour, but the anti-sticking effect is not as good as corn flour).

7. Fold the noodles and cut them into strips. After cutting, shake the noodles.
