Marinated Pork Elbow

Marinated pork knuckle is a home cooking dish that we often eat

Ingredients: pork knuckle, cooking wine, ginger, scallion, cinnamon, star anise, coriander, rock sugar.

The first thing to do is to burn the pork elbow with fire to remove the hair on the skin and clean it with water, as shown in the picture below. Tip: If you think it's too much trouble to handle the pork knuckles, you can ask the meat vendor to do it for you.

Next, put some water in a pot and add the pork knuckles, ginger, scallions and cooking wine as shown in the picture below.

Then add cinnamon, star anise, allspice and soy sauce to the pot, as shown in the picture below.

Then add salt and monosodium glutamate (MSG) to the pot, as shown in the picture below. Tip: Regarding the amount of salt, I recommend that you add it according to your own personal preference, it will be more appropriate.

Then in the frying pan put the right amount of cooking oil and add a few pieces of rock sugar, simmering and melting, as shown in the picture below. Tips: When you boil the icing sugar, it is best to turn on the low heat, so as to effectively prevent the icing sugar boiling scorched. This point we must pay attention to.

Then pour the boiled icing sugar solution into the pot, turn on the low heat brine for 1 hour, as shown in the picture below. Tip: If you think boiling until the rock sugar solution is more troublesome, you can put the rock sugar directly into the pot to cook is also possible.

After the elbows are done brining, pour the remaining broth in the pot on top of the elbows.
