But today, the production method is much more convenient, usually all of these raw materials are dried, and then polished into powder with a machine, and then mixed with crushed rice to make it.

First, all the raw materials are dried, which is the ratio of polygonum and rice according to 1 to 13 to prepare, that is, 13 pounds of rice flour need to use polygonum 1 pound. As for the other raw materials, it should be much less, generally is the hot polygonum grass 20 percent on it.

When these materials according to the proportion of crushed, and then and rice flour together, and while mixing and adding water. But the water added should not be too much, when the hand rolled into a ball, and held in the hands of the dry humidity to not stick to the hand for the best.

This is placed in a cool, dry place on the board for 48 hours or so, be sure to keep track of the time, when the surface of the brewery if the growth of long white hairs, the length of about three or four millimeters, it means that the brewery fermentation is good.

If the time is longer, the fuzz will become black. If you smell an unpleasant odor, it means that the fermentation has failed.

When the fermentation is done, take them out in time and put them in the dustpan, take them to the sun to dry, and then you can store them well after they are dried. In order to avoid the growth of insects, try to dry for a few days. If it is three days, drying five or six days should be completely dry, and then seal them to save it.

The key to the good and bad of the wine song lies in the control of the temperature, the temperature is not low, the temperature is high is not good, the general control in 24~36 hours. In the past, farmers didn't have thermometers, they judged by experience, because the temperature on the day of the three volts was generally 30 degrees, which was very favorable for fermentation, so at that time they all concentrated on the three volts of the day to make the wine song.

If you don't have the experience, when the fermentation is more than 24 hours, you can open it and check it out, and when you find that there is already a white layer of fine fluff on the wine, it means that the fermentation is very good.
