Monosodium glutamate is a condiment, and its main component is sodium glutamate. The main function of monosodium glutamate is to increase the flavor of food. MSG is most used in Chinese food, and it can also be used in soup and sauce. Monosodium glutamate refers to the crystallization of sodium glutamate fermented and purified from grain.
From 1965, glutamic acid was produced from sugar or starch in China, and then glutamic acid was extracted by isoelectric point crystallization precipitation, ion exchange or zinc salt refining, and then sodium glutamate crystal was made by decoloration, iron removal, evaporation and crystallization.
Sodium glutamate is the sodium salt of amino acid glutamic acid, which is a tasteless and colorless crystal. It decomposes and melts at 232℃. Sodium glutamate has good water solubility, and 72g sodium glutamate can be dissolved in 100 ml water.
