Manufacturing method and formula of crispy guokui

Crispy Guokui is one of the traditional snacks in Mianyang, Sichuan, which is golden in color, salty and crispy. It is famous for its fragrance and has various fillings. There is a red seal on the pot helmet, which is shiny and mouth-watering, and it is more delicious than the current moon cakes.

Production materials: flour1000g, 200g old yeast, a little baking soda powder, Sichuan salt and pepper powder, and a proper amount of cooked lard.

Production method:

Take 200 grams of flour and add 250 grams of cooked lard to make a crisp dough, which is divided into 10 portions. In addition, 500 grams of flour is kneaded into a fermented dough by adding 200 grams of old yeast and appropriate amount of water. Boil the remaining flour in boiling water, mix it with fermented dough and baking soda, knead it evenly, cover it with a wet cloth, simmer for about 1 hour, knead it into long strips, and choose 10 dosage. Add Sichuan salt and pepper powder to the crispy dough and divide it into 10 portions.
