How should duck be cooked to be tender?

Blanch the duck with boiling water before cooking, so that it will be tender. Specific practices are as follows:

Preparation materials: half a slice of duck, beer 1 big bottle, tofu 350g, soy sauce 1 tablespoon, salt 5g, monosodium glutamate 2g, dried tangerine peel 1 tablespoon, oyster sauce 1 tablespoon, sugar 15g, star anise/kloc.

1. First, cut the duck into pieces with a knife, blanch it in exothermic water, and then take it out and put it aside.

2. Store the scalded duck oil separately.

3. Put duck oil in the pot, heat it on high fire, add onion and ginger, and stir fry quickly with a wooden shovel.

4. Then put the prepared duck pieces, star anise, cinnamon, fragrant leaves and orange peel into the pot and stir them evenly with a shovel.

5. Stir well, then pour in the right amount of beer. After the fire boils, turn to low heat and continue to cook for 60 minutes.

6.60 minutes later, put the prepared oyster sauce, soy sauce, sugar, salt, chicken essence and tofu into the pot, cover the pot and cook for 40 minutes.

7. After 40 minutes, sprinkle with chopped green onion and coriander and serve.
