What is a hoofflower?
Mother's hoof flower looks better than snow, like flying flowers, smooth and delicate, tender and refreshing, fragrant but not greasy, beans like cotton yarn, soup overflowing. After a hundred years of wind and rain, it is the top grade in Chengdu's famous food. Its raw materials are pig's trotters, white kidney beans, ginger, pepper, white wine, cooking wine and shallots.

Hooves are generally used for stewing soup, burning and marinating, and can also be made into cold dishes wrapped in hooves, cooked and sliced. The method is: after the fresh pig's trotters are depilated and scraped clean, the internal bones are cut open, taken out and pickled. When in use, roll it into a round stick, wrap it in a clean cloth, then wrap it in a slender straw rope from beginning to end, put it in a pot and cook it, remove the rope and cloth, cut it into pieces to wrap the hoof meat, and make a cold salad.
