Characteristics of Seven Common Edible Oils (Vegetable Oils)

Vegetable oil has different characteristics due to different raw materials. Then the advantages and disadvantages of seven common vegetable oils in life and the suitable cooking methods are introduced.

1, soybean oil

As the name implies, soybean oil is an edible oil extracted from soybeans, which is often called soybean salad oil. Usually, soybean oil is light yellow and looks clear and transparent without precipitation. However, it should be noted that soybean oil is rich in nutrition and its shelf life is relatively short, usually only one year, and the shelf life is even shorter after opening. In addition, the color of refined soybean oil will gradually change from light to dark during long-term storage, which may be because the oil will slowly oxidize over time, so try to buy soybean oil instead of hoarding it. Considering the low oil yield of soybean oil, the quality of soybean oil is not as good as that of pressed oil and the cost is low, so soybean oil is generally cheaper than pressed oil. When cooking, soybean oil bubbles easily when heated, and it is not suitable for frying, frying and frying.

2. Peanut oil

Peanut oil has a strong fragrance, light yellow body and clear color. The dishes made of peanut oil are rich in flavor, very popular in family cooking and rich in nutrition. The ratio of saturated fatty acids to unsaturated fatty acids is about 1:4, and the content of carotene and various vitamins is not low. It is an edible oil with balanced nutrition. Peanut oil can usually be divided into two types according to the production process: leaching peanut oil and pressing peanut oil. Peanut oil is nutritious and more suitable for cooking. If it is used to fry things, it will consume some nutrients, and the oil smoke is relatively large, which is not suitable for frying and frying.

3. Corn oil

Corn oil is an oil extracted from corn germ, also known as corn oil and corn germ oil. Corn oil is rich in vitamins and unsaturated fatty acids, and the oil body is clear and transparent, with a fragrant smell. The dishes made with it are refreshing and delicious, and it is not easy to make people feel greasy. It is recognized as nutritious and healthy edible oil.

The lampblack point is relatively high and stable, which is suitable for both quick frying and deep frying.

4. Rapeseed oil

Rapeseed oil is one of the traditional edible oils in China and has a special flavor. The use of rapeseed oil in traditional dishes can enrich the flavor and taste of dishes. The oleic acid content of unsaturated fatty acids in rapeseed oil is second only to olive oil, and the cholesterol is very little or even negligible. It can be considered as healthy edible oil, but rapeseed oil also has some shortcomings, including high erucic acid, which is not suitable for the "three highs" population.

Rapeseed oil has a slightly higher smoke point and better stability, and is suitable for various cooking methods. However, because rapeseed oil is slightly "green", it is not suitable for direct addition in cold salad, but it becomes "cooked oil" after heating and tastes very fragrant.

5, blending oil

Blended oil is an edible oil prepared from two or more refined vegetable oils in a certain proportion. Usually, refined rapeseed oil, sunflower oil and soybean oil are the main products, and the nutrition and fatty acid composition are relatively balanced and comprehensive. However, the types and proportions of refined oil added to each blended oil are different. When buying, you should carefully observe the ingredient list and buy according to your own needs.

Blended oil is basically suitable for all kinds of cooking methods, such as frying, frying, frying, frying or cold salad.

6.olive oil

Olive oil is a high-end oil in price. Different from the above five edible oils, olive oil belongs to woody plant oil. It is an edible oil that is directly cold pressed with fresh olive melon. Because it has not undergone any heating and chemical treatment, most of its nutrients have been preserved, so it is a very healthy edible oil. Olive oil is subdivided into virgin olive oil and refined olive oil.

Among them, virgin olive oil is rich in polyphenols, monounsaturated fatty acids, vitamins and other substances, which has antioxidant effect. Usually, the price is relatively high, so it is not suitable for cooking, and it is more suitable for stuffing or cold salad. The difference between refined olive oil and traditional vegetable oil is not very big, and the smoke point is relatively high. Although it is also suitable for cooking, it is expensive and cost-effective.

Betis is recommended to import olive oil from Spain, which is an old brand with reliable quality.

7. Self-extracting oil

"Self-extracting oil" is also listed separately here, because it is very common. In life, people always think that all kinds of brands of edible oil in supermarkets will have industrial additives, so they prefer self-extracting oil, thinking that self-extracting oil is healthier and tastes better without additives, but this is really not the case.

Since there is no strict supervision from raw materials to processing, the processing environment needs to be improved, and it is easy to be infected by bacteria, especially Aspergillus flavus, which is easy to grow on peanuts, soybeans and other ingredients. Small workshops cannot choose ingredients. Long-term consumption of self-squeezed oil without quality assurance is not healthy, and self-squeezed oil is usually not refined, contains a lot of impurities, is usually dark in color, and is more prone to oxidation during storage, so it is generally not recommended to eat.

So overall, rapeseed oil is the most fragrant.
