Today's rice doesn't need to be cooked. I'll share a particularly delicious food with you. You can try it if you like.
Here are two kilos of rice. Wash it with clear water, then put it in a casserole, and then pour in clear water. Just wash rice.
Cover with plastic wrap and ferment in a warm place. If the weather is cold, it can be fermented in the heat preservation button of the rice cooker or in the electric blanket.
If it is fermented on an electric blanket for four days, it tastes sour, and then this rice grain feels slippery.
Wash it with clear water and filter it out.
Put it in a cooking machine, add 500 ml of cold water and beat it into rice slurry.
Put the beaten rice paste on gauze and filter.
Squeeze out rice paste. This cloth is full of rice flour. Let's take it out.
When filtering, make today's meatballs with rice flour in the filter cloth of the pottery jar. The remaining rice slurry can be made into cakes and rice cakes.
This is just filtered rice noodles. It's very delicate.
Cut into pieces with a knife or knead into balls by hand.
Now put this rice noodle in the pot and cook it for five minutes.
Only one third of it needs to be cooked here.
The inside is not ripe, so you can crush it by hand until it is smooth and not sticky.
Rub a layer of oil on the chopping board and roll the kneaded rice balls into thin slices.
Brush the surface with a layer of oil, and then cut it into noodles with a knife, like handmade noodles.
If everyone has a dough press at home, it will be more uniform. Now a handmade rice noodle is cut out, and then it can be scalded or boiled in a pot for one minute, and then seasoned according to your own preferences. Add some minced garlic, salt, onion, flowers, soy sauce and chili pepper and mix well.
If the elderly or children eat it, they can pour chicken soup, which will be more delicious and nutritious. This is the traditional method of making rice noodles by hand, and you can also make them yourself at home.
