The origin of white tea and its story

White tea is one of China's traditional famous teas, originating from the area of Wuyi Mountain in Fujian Province, China. According to legend, during the Ming Dynasty, a tea farmer was picking tea leaves in Wuyi Mountain when he suddenly had an urgent matter to leave, and left the withered tea leaves with new buds picked aside. Later, a few days later, the farmer returned and found that the wilted tea leaves had white edges, so he continued to process these white tea leaves and made white tea.

Another theory is that white tea was invented by an elderly tea merchant in the Wuyi Mountain area of Fujian Province during the Tang Dynasty. One year, this elderly tea merchant was not feeling well and was unable to process the plucked tea leaves in time, so he took the leaves, which had been exposed to the sun for a few days, home and left them for a period of time. After a few days, the tea leaves are completely dry without any processing, the weather is gradually humid, the surface of the tea leaves began to appear white mold, the elderly do not want to waste these tea leaves, so decided to make it into tea cakes, the results found that the taste is particularly good, they gave this tea cake named "white tea".

Whichever is true, it can be seen that the production and development of white tea is slowly evolving from the mishandling of tea leaves and natural processes. The production of white tea is more concise than other tea processes, not through the kneading and fermentation process, but after the picking of sun-dried customized to start the work to be slightly re-processed, so it is known as the "natural state of the tea", retaining the original characteristics and nutrients of the tea leaves.
