Fried meatball method
The method of croquetting is one of a complete set of croquetting methods.
Ingredients: peeled mung bean, flour, pepper powder, spiced powder, salt, onion, ginger and pepper.
Exercise:
1. Soak peeled mung beans in water for one day until they swell. After washing, put it in a blender and beat it into mung bean paste. Add proper flour here. First, it should be thickened and easy to shape. Second, the taste will be more solid (dare not add it at that time, only add it when there is a little paste left).
2. Add pepper powder, salt, a small amount of spiced powder and Chili powder to the mung bean paste. I don't think the pepper powder I bought is fragrant enough. It's my own freshly ground pepper and pepper powder.
3. Add onion and ginger, and then stir vigorously. I stirred 15 minutes.
4. Out of the oil pan, prepare a spoon to drain the oil. I should squeeze the ball out by hand. My paste is so thin that I can only scoop it out with a small spoon. First fry the meatballs, float them, and then take them out to cool.
5. Look at this meatball carefully. Does it look like a tadpole with a big head? After the meatballs are completely cooled, put them in a hot oil pan and fry them until they are brown.
6. Make a hot and sour meatball soup on the night of frying, or you will eat it all. Soak dried seaweed, mushrooms, fungus and vermicelli, wash them, and fry them in an oil pan to make them fragrant.
7. Add water to boil, add meatballs and cook thoroughly, sprinkle with celery and put them in a bowl to eat.

1. Wash pork belly, cut it into small pieces with a knife, and then chop it into minced meat.
2. Add soy sauce, salt, allspice powder and minced onion and ginger to the minced meat, and then continue to chop it to make it tasty.
3, lotus root peeled and washed, chopped, add minced meat and continue to simmer for a while.
4. Put it in a bowl, beat in the eggs and add some starch (about a spoonful is enough).
5. Stir the filling evenly.
6. Knead minced meat into small meatballs by hand and fry them in the oil pan.

When the oil is cooked to 70% or 80% maturity, add the meatballs and turn to low heat. The meatballs are not easy to age and are fried more evenly.
