1. The bean paste produced in Pixian's unique climate is quite authentic.

2. There are probably two kinds of Pixian bean paste.

(1) One is red bean paste, which has short fermentation period, simple process and low consumption. In Sichuan, especially in Pixian County, picky families are all made by themselves.

(2) There are traditional Pixian watercress. The longer the fermentation period, the darker the color, and the shortest fermentation period is one year. The traditional Pixian watercress can't be made at home, because it is an intangible traditional craft that needs to be dried every day for more than one year.

3. Generally speaking, the judgment of bean paste cannot be generalized. After all, every region, even everyone, has different tastes. There is no absolute, only the most suitable.
