What is green tea?
Oolong tea with changeable tea flavor. Green tea, also known as oolong tea, is not the highest among the six major teas, but its aroma is definitely the most changeable. Different varieties of tea trees, different process combinations and different temperatures have created the wonderful and diverse aroma types of oolong tea as perfume.
Tieguanyin with a strong aroma, Dahongpao with a strong aroma, Dan Cong with gardenia, and Oriental Beauty Tea with ripe fruit honey in Taiwan Province Province all belong to oolong tea.
Distribution and classification of oolong tea
Oolong tea is a unique tea in China, mainly produced in Fujian, Guangdong, Taiwan Province and other places, with a small amount produced in Sichuan and Hunan. Besides domestic sales, oolong tea is mainly exported to Japan and Southeast Asia.
There are many kinds of oolong tea, which can be divided into southern Fujian oolong tea, northern Fujian oolong tea, Guangdong oolong tea and Taiwan Province oolong tea according to the origin, and can also be classified according to the product form and fermentation degree.
Quality characteristics of green tea
In addition to the basic characteristics of "green leaves and red edges", different oolong teas are colorful in appearance, aroma and taste. From the name of dancong tea, the Phoenix in Guangdong, we can see how colorful the oolong tea family is.
Fenghuang Dan Cong is a variety and strain separated and bred from the national tea variety Fenghuang Narcissus. At present, there are more than 80 strains, including eggplant leaves, pomelo leaves and bamboo leaves. Named after the color of leaves, white leaves and black leaves, the fragrance types are named Mei Lan, Gardenia, Osmanthus fragrans, Magnolia grandis, Cinnamomum cassia, almond fragrance, grapefruit fragrance and cordate telosma.
Named after the shape of tea, there are big bone strips, silk tea, big butterfly frogs and so on. In addition, they are named after trees, places of origin, historical stories and legends.
The taste of green tea
Green tea is best brewed in a covered bowl and teapot. Of course, you can also choose glass pots, porcelain pots, porcelain cups and drifting cups for brewing. The amount of tea can be determined according to personal taste. Generally, 5-7g of tea leaves and150ml of water are suitable, and the ratio of tea leaves to water is 1:20 to 1:30. Except for a few tender oolong teas, such as Bai Hao oolong tea, which should be brewed with boiling water at 85 ~ 90℃, open-leaf oolong teas, such as Tieguanyin and Wuyi Rock Tea, should be brewed with boiling water.
As for the brewing time and times, the first brewing time is 10~20 seconds, and each brewing time will be extended by 10~30 seconds. Granular (Tieguanyin, etc. ), bunchy (octagonal pavilion asparagus tea) and blocky oolong tea (Zhangping narcissus) take longer to brew than strip (Wuyi rock tea, etc.). ). Oolong tea can generally be brewed for 5~7 times, and high-quality oolong tea still has a lingering fragrance after being brewed for 12 times or more.
Storage of green tea
Re-baked fire tea, such as traditional Wuyi rock tea with high firepower and Tieguanyin tea with strong aroma, belongs to re-baked fire. You can choose to store the pottery jar, porcelain jar or purple sand jar at room temperature, and open it at regular intervals to let the tea breathe and make its contents automatically oxidize.
Automatic vacuum packaging machine is often used for lightly baked oolong tea in the market. Consumers just need to put it in the refrigerator. If the storage period is less than 6 months, the refrigeration temperature can be kept at 0℃-5℃, and if the storage period is more than half a year, it is recommended to freeze at-10℃ ..
The lightly roasted oolong in northern Fujian is strip-shaped. If it is packed by vacuum compression, it will easily lead to shape damage and fragmentation. You can choose PC plastic vacuum cans, tinplate cans and tin tea cans, fill them, seal them with tape, tie them tightly with plastic bags and store them in the refrigerator at low temperature.
