1. Put the sugar in the spoon. Put about three-quarters of the volume.

2. Drive to the fire first, put the spoon on it, and fire when you see saccharification. Stir with chopsticks, just like crucibles and glass rods used in chemical experiments.

When the sugar is almost half, pinch a little baking soda with your hand and put it on it. A little is enough! Too much alkali is particularly strong, very spicy and not delicious.

As soon as baking soda is put in, it turns into a strange yellow. Always stir with chopsticks at this time. Stir until the liquid is uniform. Uniformity is delicious, otherwise it's like eating sand. Try not to make yellow too heavy. If yellow is brownish, it will be bitter and not delicious.
