Introduction to AOC
It is a product geographical indication for traditional foodstuffs in France and Switzerland, and is part of the European Appellation of Origin Protection (AOP) label. Appellations of origin guarantee the quality, characteristics, origin and production processes of products (wines, ciders, fruits, vegetables, dairy products, etc.) by the producer.
The purpose of these quality marks is to make the corresponding product easily recognizable. For example, French cheeses are marked with a red dye on the base or an identifiable mark on a label or sign made of casein with a numerical number and the inspection agency. The colors of the labels are divided into two categories: green for produce and red for dairy.
