We know that many edible things, if left for a long time, will go bad and can no longer be eaten. But wine is an exception. Some wines (white wine) taste better the longer they are stored.

Many people think that all wines can be stored for a long time, and the longer they are stored, the better they taste. In fact, this understanding is wrong.

1. What wine is suitable for long-term storage?

Liquor brewed by traditional techniques (alcohol-free blended liquor) is suitable for long-term storage. Maotai-flavor liquor is more suitable for long-term storage than Luzhou-flavor liquor and Fen-flavor liquor. Generally, the storage time of wine is not less than three years, and the wine stored for more than 20 years can be regarded as a real old wine.

Second, why do wines that have been stored for a long time feel more fragrant and delicious?

The principle is this: wine contains many kinds of organic acids. During storage, alcohol substances will react with organic acids to generate a new substance called "ester". Because the newly generated esters have their own special aroma, most wines stored for a certain period of time will become particularly mellow.

Therefore, people usually call this "esterification reaction" of wine "aroma-producing reaction". The esterification of wine is rather slow. Generally, high-quality wine needs to be stored for about 4 to 5 years before it becomes rich in aroma and mellow in flavor. And this best state can last for decades at most.

3. How many degrees is the original wine worth storing?

The original liquor will be hydrolyzed during storage, that is, the acid content is high and the ester content is low, which is not suitable for long-term storage of liquor with low alcohol content. The best storage degree of liquor is between 50-68 degrees (40 degrees or above), and liquor with 53 degrees or above is suitable for long-term storage. Low alcohol is easy to be lost after a long time.

If it is a low-alcohol wine, it will have no taste after a long storage time. For high-alcohol liquor, we should also pay attention to storage. Generally, liquor should be placed in a dark and humid place, and the mouth should be sealed with plastic cups to prevent it from escaping. Observe more and walk less.

Fourth, the storage method of the original wine

1. Store in a jar.

First, professional wineries store wine in big jars and seal the jars. This is very important. The minerals in the ceramic jar can make the quality of liquor better and the more fragrant it is.

2. Put it in a wine cellar or bury it underground.

If you have a wine cellar at home, you can put the sealed bottle into the wine cellar at this time. If not, you can bury the jar as deep as possible, because the deeper you bury it, you can ensure constant temperature and humidity.

If it is an ordinary apartment, it is recommended to store it in the basement, where there is no direct sunlight, the relative temperature and humidity are constant, and frequent ventilation is needed. However, the temperature in this place is still not constant, so long-term storage is not recommended.

3. Storage time

Generally, Maotai-flavor liquor and Luzhou-flavor liquor are the easiest to preserve and can be preserved for a long time, but rice-flavor liquor and fen-flavor liquor are not. It is best not to store this kind of white wine for a long time, because it is easy to lose its original flavor and emit bitterness after long storage. If you keep it at home, it is recommended not to exceed three years.

As the saying goes, wine makes ginger spicy. Drink old wine with turbid water and ice. High-quality liquor must have a suitable storage period. Luzhou-flavor liquor should be stored for at least 3 ~ 6 months, mostly for more than one year. The storage period of Fen-flavor liquor is about one year, and Maotai-flavor liquor requires storage for more than three years.
