Why Georgians like to drink from clay pots
Georgians use clay pots to make wine, not to drink it. In contrast to modern industrialized technology, which uses chemical additives to ensure the stability and freshness of the wine, vinification in clay pots involves fermentation of the grape juice in natural conditions without any artificial intervention, and the fermentation and aging can take up to four years. This is why it is called the most "natural" wine "without removing anything from the grapes and without adding anything to them". Located in Kakheti, Georgia's largest wine region, Kvaria Winery is one of the few wineries in the Kakheti area that uses the traditional artisanal winemaking process of clay pots. The winery uses Sabravi, Kastelli and other well-known quality grapes to make wine, with excellent quality and pure flavor.
