How to stew pork leg bones delicious and fragrant

1: Soak the leg bones with clear water for one hour in advance, and change the water several times in between. Or put the leg bones in a pot with cold water, add cooking wine, ginger and pepper, blanch, skim off the blood foam, and then wash the bones with running water.

2: Prepare a proper amount of onion, ginger, star anise, two fragrant leaves, one angelica dahurica and a small piece of cinnamon for later use.

3: Add warm water to the pot again, add the blanched leg bones, add the prepared cinnamon, onion, ginger and star anise leaves, bring to a boil with high fire and simmer for one and a half hours. (Season with salt after one hour)

Step 1: Soak pig bones with clear water.

When stewing bone soup, many people will blanch the bought pig bones. Actually, this is not right. The correct way is to soak the pig bones in clear water for 3 hours (water needs to be changed once in the middle) to let the blood in the pig bones flow out completely, so that the stewed pig bone soup is more fragrant and whiter. If you have been to the back kitchen of the hotel, you will find that the pig bones are always soaked in clean water, and the tap is still on, in order to remove the blood from the pig bones!

Step 2: Cook the pig bones in cold water.

Put the soaked pig bones and proper amount of water into the pot, then boil the water with strong fire, continue to cook for 3 minutes after boiling, and then take out the pig bones and wash them with cold water twice for later use. Pork bones must be blanched in cold water, because cold water can completely cook the fishy smell inside the pig bones and make the boiled bone soup full of flavor. Never use hot water or boiled water, which will cause the smell to boil.

Step 3: Stir-fry the pork bones and stew them on low heat.

Put the right amount of oil in the pot. When the oil temperature reaches 70%, put the pork bones and ginger into the pot. Stir-fry the pork bones with medium heat for 2 minutes, then add 5ml of white wine to the pot and continue to stir-fry for 30 seconds (white wine is put to remove the fishy smell from the pork bones), then put the fried pork bones into a casserole, and add a proper amount of hot water and salt into the casserole at the same time. Stew the pork bones for 2-3 hours, and the bone soup will be cooked.
