The scientific name thick crab, commonly known as Sao clip, is also called octopus clip.

Sao clip has eight long legs and a pair of pliers, crawling sideways and feeding on the roots of small animals, organic matter, algae and plants in the mud. It is red when it is ripe, and there are as many organs inside and outside as crabs. If outsiders don't pay attention, it is easy to be mistaken for crabs. Different from crab, its shell is slightly rectangular, and there is no fluff on its two big claws. They look like river crabs, but they are much smaller and as big as green apricots. It likes light. Octopus with tofu is actually a very fresh and beautiful soup. After a few sips, your mother will call you home to eat your childhood meal. Octopus and tofu must be handmade, and the taste is pure and authentic. Its practice is more complicated, with seven major processes that take a day.

Put a bag of octopus in a vat for half an hour, let it spit out the sediment in the stomach, wash it and mash it, then squeeze out the gravy with mesh cloth, add some salt, cook it in a cauldron, let it cool, and then soak it in vegetable soup such as spinach, leaving a fresh bite, which is memorable and worth remembering for a lifetime.

This kind of "tofu" with special flavor without adding any additives has spread to this day and become a well-known flavor snack. Restaurants in Yingkou and its suburbs have octopus with tofu for diners to taste. Among them, the clam tofu in Daxing Village, Lunan Town, Laobian District is the most famous and can be called a must. People from many cities come here to taste this delicious food.

Every year around Tomb-Sweeping Day, you can eat the most delicious and pure tofu. At that time, Liaohe River was just civilized, and the octopus that woke up from hibernation after sleeping for a winter had the cleanest gastrointestinal tract. But now, with the expansion of fame, the seasonal restriction has been broken, and you can have enough to eat most of the year.

In the spring of March, the earth turned green, and friends and relatives gathered together, sitting on the kang of the farmhouse, serving wine glasses and pinching steaming tofu, feeling very satisfied. Watching the river flow slowly from the front of the house, the songs of birds are louder and louder, and the aroma of tofu is also floating between the lips and teeth, between the river and the sea.
