1, light cake

Light cake is one of the traditional snacks in Fuqing. The main materials and auxiliary materials are flour, yeast, alkali, salt and sesame. The manufacturing method belongs to a baking method.

2. taro

Taro is a very popular snack cake in the market. The production process is as follows: peeled taro, washed, cut into pieces, steamed into mud, washed and soaked rice, ground into pulp, added with taro, shrimp oil, salt and monosodium glutamate, poured out and allowed to solidify. When eating, cut into thin slices and triangles, and fry in a hot oil pan until the skin is yellow and crisp.

3. Preserved rice

Wash the rice pulp, soak it in the ratio of rice to glutinous rice of 3: 7 or 4: 6, mix and grind it into pulp, put it into a pulp bag (made of white cotton cloth), drain the water, take it out, add sugar (sometimes add some sweet potatoes to make the pulp more fluffy and delicious) and yeast, fully ferment it, and line it with "pulp leaves"

4. Rat Quben

Rat Qu got its name because it was mainly based on the herbal rat Qu. In the wild, the leaves of mouse grass are forked, and there are small yellow flowers, which were picked before Tomb-Sweeping Day. Wash the grass, boil it, mash it into slurry, add the pulverized glutinous rice to make the cake crust, wrap it with stuffing, and knead it into a cylindrical shape of about 5 cm.

5. Fuqing snapper cake

It is a traditional snack in Fuqing, Fujian. Fresh oyster is selected as the main raw material, with laver and cabbage, mixed with rice paste, and finally fried. Oyster cake is crisp and delicious.
