Traditional Tieguanyin series

Anxi Tieguanyin can be basically divided into Zong Zheng Tieguanyin, authentic Tieguanyin and Tieguanyin. These three Tieguanyin teas differ greatly in flavor and price.

Tieguanyin, Zong Zheng, takes Anxi's original "red-bud and oblique-tailed peach" as raw material, which has sweet-scented osmanthus, orchid fragrance and other flavors, and the tea price is more than 500g 1000 yuan. Authentic Tieguanyin is a variety of the original "red-bud crooked-tailed peach" in Anxi, which is made of tea varieties such as Red Heart and Hong Ying. Its fragrance types include milk fragrance, vanilla fragrance, Qing Xiang fragrance and ripe rhyme fragrance, and the price of tea is more than 500g 100 yuan. Tieguanyin tea is made in a specific way, but the raw materials are not necessarily pure. Fresh leaves may not come from Tieguanyin tea varieties in Anxi, such as white sample, white heart, thin leaves and bamboo leaves. And their fragrance types are floral and fruity, and the price of tea is above 500g in 30 yuan. On the whole, Tieguanyin tea, which is made from Tieguanyin tea and other tea varieties, has a strong blue fragrance and a special nectar flavor, commonly known as "Guanyin rhyme". Its unique floral and fruity fragrance is not made in the flower kiln of jasmine and magnolia, but the natural fragrance caused by the variety, climate, season and unique technology of Tieguanyin tea tree.

Know the incense, but also know the origin of Tieguanyin. Tieguanyin tea is closely related to the producing area, and the quality of Tieguanyin tea produced in different producing areas is different. The same Tieguanyin variety has different performances within several kilometers. It is impossible for consumers to check the soil and climate of each producing area on the spot, but through tea tasting practice, they can tell which producing area has better tea. At present, the development of Anxi Tieguanyin tea is spread all over Anxi, and extends beyond Anxi County, even to Guangdong and Taiwan Province Province. At present, some manufacturers in Anxi have begun to pay attention to the signs of origin, such as "Fan Chao". After being certified by relevant departments, they have marked the origin and green food signs on the tea labels. Their products are all over the major tea consumption groups in Guangdong, and their products are distributed in more than 50 shopping malls and supermarkets/kloc-0, which are well received by consumers. Therefore, you can't just look at Tieguanyin, but also talk about the place of origin. The author recommends "Anxi", which belongs to the brand of Anxi producing area and is produced in Xiping, Anxi. Stable quality, mellow taste and long aftertaste. In addition, Tieguanyin in Anxi, a northeast producing area, also performed well due to the long sunshine time and large temperature difference.

Tieguanyin is divided into raw tea (original semi-finished tea) and cooked tea (finished tea). The former is raw tea, which has not been blanched and roasted, and the content of tea polyphenols, tea tannins and tea chlorate is high. So it is normal that some raw teas are a little green. One way to avoid this smell is to remove the tea stems and bake them, but not quickly, but slowly. The second is to store the purchased new tea for about one month before drinking.

Many tea merchants in the market regard "sour taste" as the performance of high-quality Tieguanyin. In fact, the style of Tieguanyin tea is not much different from that of green tea and black tea, but in the process of fermentation, the quality of production is different and the taste has changed qualitatively. Green tea is fresh and fragrant, without fermentation process; Black tea is very fermented and tastes sweet. The unique production method of Tieguanyin tea is between red and green tea, which makes Tieguanyin have both the fragrance of green tea and the sweetness of black tea. So the taste is caused by tea dialect, so it is sour. In fact, different varieties, different lands and different technologies make tea have different flavors. For example, Tieguanyin in Zong Zheng on the southern line has a long and rich aroma, with a taste in the fragrance and a faint fragrance in the taste; Tieguanyin in Zong Zheng, on the northern line, has a fresh fragrance, sweet and refreshing taste, and has the taste of fresh milk. The former is thick and mellow, while the latter is thick and smooth. Generally speaking, good Tieguanyin tea has a rich aroma, unique fragrance, long aftertaste and sweet taste. This unique charm is called "Guanyin rhyme"
