Wuyi Rock Tea Process

Wuyi Rock Tea is a kind of traditional Chinese famous tea, produced in Wuyi City, Fujian Province. It is famous for its special flavor and unique process of production. The following is the production process of Wuyi Rock Tea:

1. Picking: Wuyi Rock Tea is usually picked around the Qingming Festival, around the middle of March every year. Only young leaves and bud tips are chosen, as they contain more of the components found in tea.

2. Sun-drying: The picked tea leaves are dried under the sun, usually for 4 to 6 hours. The surface of the tea leaves will turn dark green after sun-drying.

3. Rubbing: The sun-dried tea leaves are put into the rubbing machine, which is constantly rotating and vibrating, so that the tea leaves are rubbed in different directions, intensities and speeds, so that the fresh leaf juice of the tea leaves can be released, and the unique aroma of the tea leaves can be reflected.

4. Fermentation: The finished tea leaves are put into an environment with high humidity and low oxygen, where natural microbial fermentation occurs. At this point, the color of the tea leaves will change from dark green to dark red, and the aroma of the tea leaves will be further released.

5. Roasting: The fermented tea leaves are put into a charcoal oven and roasted. The purpose of drying is to let the water evaporate from the tea leaves, so that the floral, fruity and burnt aroma of the tea leaves will combine to become the unique aroma of Wuyi Rock Tea.

6. Cheese: The roasted tea leaves are fed into the cheese machine for cheese. The purpose of cheese is to roll the tea leaves into a ball shape, making the tea easier to store and transport. Also, the cheese helps to release the tea leaves, making the tea soup stronger.

7. Storage: After the cheese is finished, the Wuyi Rock Tea is sent to the storage room for long time storage. The environment of the storage room is very important, you need to keep constant temperature, constant humidity and proper ventilation environment, so that the quality of the tea can be guaranteed.
