What is mascarpone?
Mascapone is made by adding tartaric acid to whipped cream to thicken it. So mascarpone should be classified as condensed cream instead of cheese. Its cream content is slightly lower than that of ordinary cream cheese, and it is lighter.
Method for making mascarpone cheese
Ingredients: 400g of whipped cream, lemon juice18g.
Exercise:
1, prepare whipped cream and a lemon.
2. Weigh 400g of whipped cream and put it into a milk pan for later use.
3. Take about 18g of lemon juice for later use.
4. Put the whipped cream on the fire and heat it to 85 degrees.
5. Pour the lemon juice into the cream and stir well.
6. Keep stirring at about 85 degrees for 5 minutes.
7. Turn off the fire and let it cool, then put it in the refrigerator 12 hours.
8, 2 hours later, put the solidified cream on gauze to filter out excess whey, and filter for 24 hours.
