What is fermented dairy products?
Fermented dairy products refer to lactic acid products made from emulsion by microbial fermentation. Fermented dairy products include yogurt, Bifidobacterium fermented milk, Bulgarian fermented milk, acidophilic milk rod fermented milk, yogurt wine, active milk beverage, cheese, sour cream and so on.
Fermented dairy products have the advantages of rich nutrition, easy digestion, good palatability and easy storage, and are deeply loved by consumers. Among them, sour cream and yogurt are products made by inoculating lactic acid bacteria into emulsion and fermenting. In addition to bacteria, some products are fermented by yeast and mold. For example, blue cheese and salmonella cheese are fermented by Penicillium Loudi and Salmonella Bai Qing. There are many kinds of yeasts in Kefir. These microorganisms can not only improve the appearance and physical and chemical properties of products, but also enrich the flavor of fermented products.
