I. Legends about wine and the origin of wine
Wine is a very strange and wonderful drink. There is almost no nation in the world that does not drink wine. China is one of the first countries in the world to make wine, and has made great and special contributions to the development of the world's wine-making technology.
So when and by whom did wine begin to be brewed? The ancient books say different things. There are two kinds of legends: one is that Yi Di began to brew wine. The Shiben says: "Yi Di began to make wine and mash." The "Strategies of the Warring States" (战国策-魏策) says: "In the past, the emperor's daughter made Yi Di make wine and make it beautiful, and gave it to Yu, who drank it and sweetened it." Another legend is that Du Kang invented wine making. Who was Du Kang? There are many different opinions. Some say he was from Shaanxi, some say he was from Henan. Some say he came from the people, while others say he was from the nobility. The Shuowen Jiezi (Explanation of Chinese Characters) says: "Shao Kang, Du Kang." Shao Kang was the fifth king of the Xia Dynasty, the first dynasty of China established by Qi, the son of Xia Yu, and Shao Kang means Du Kang, so Du Kang was a king. The impact of Du Kang's wine-making was quite far-reaching and later became synonymous with wine. Cao Cao wrote in his "Short Songs of Songs": "When we sing to wine, what is life like? It's like the morning dew, but the days are long. When I am generous, my sorrows are unforgettable, what can I do to relieve them? Only Dukang." Today's Dukang wine is named after this.
It is worth noting that Xu Shen in the "Shuowen Jiezi" "wine" in the article, first said "the ancient Yidi for wine and mash", and then said "Dukang for broomcorn millet wine". This means that Yidi was first, and Dukang was second. The "wine and mash" made by Yidi was a kind of grain wine mixed with juice and dregs. Du Kang made "Panicum wine". Panicum is a generic term for sorghum, which means that Dukang made sorghum wine. Sorghum is rich in starch, especially a small amount of tannin, is the main source of aromatic substances in the wine, so sorghum is a very good raw material for brewing, many of Sichuan's wine, such as Luzhou Laojiao, Wuliangye, Langjiu, Jiannanchun, etc. are brewed from sorghum as an important raw material.
Since Yidi made wine earlier than Dukang, and Yidi was one of Xia Yu's men, where was Xia Yu from? In the ancient history of Sichuan legend, centered on Xia Yu, includes three aspects: First, Yu was born in Shi Niu. In the Book of the King of Shu, it is written, "Yu was born in Guangru County, Wenshan County, and was born in Shi Niu." According to expert evidence, Guangru County in Wenshan County is in Beichuan County in the upper reaches of the Min River in northwestern Sichuan, or in the territory of present-day Wenchuan County. Secondly, Yu married Tushan. The Book of the King of Shu contains: "(Yu) Tushan married his wife and gave birth to a son named Kai." Some people believe that Tushan is the city of Chongqing today. Thirdly, Yu ruled over water in Sichuan. In the Shangshu-Yugong, it is written, "(Yu) guided the river from Minshan, and the east part of the river was called Tuo." The above records show that Yu was born in Sichuan, married and had children in Sichuan, and built his career by treating water in Sichuan. Yu's development of the northwest region of Sichuan has increased the population and promoted the development of agriculture, thus providing indispensable conditions for the brewing of wine, from which it is presumed that Yidi's brewing of wine to offer to Yu seems to have something to do with Sichuan as well. Sichuan may be the home of Chinese wine.
But legends are always legends. I'm afraid we'll never be able to argue about the invention of wine and its birthplace. Jin Jiang Tong in his "wine grant" said:
The rise of wine, from the emperor. Or cloud Yi Di, a said Dukang. There is not enough rice, commissioned by the empty mulberry. Deposited into flavor, long storage gas fragrance. This is out of this, not by the strange side.
According to Jiang Tong's statement, the wine originated in the "Emperor" when the rice is not eaten, placed in the hollow of the mulberry tree trunk or placed in the mulberry forest, after the "accumulation", "stored for a long time! After "accumulating" and "storing for a long time", it can change its flavor and aroma into wine. Yidi and Dukang are just good at brewing wine, and there is no mysterious "magic formula". Jiang Tong said the emperor, can be understood as the ancient times of the so-called "three emperors" Fuxi, Suiren, Shennong so-called "three emperors" in the earliest Fuxi, can also be understood as "three emperors". Fuxi taught the people to make nets for fishing and hunting; Suiren drilled wood for fire and taught the people to cook food; Shennong taught the people to farm. These three emperors are symbolic figures. Their activities to teach the people, reflecting the development of economic life in primitive Chinese society. It should be said that the origin of wine in the primitive social period is in line with reality.
In our daily lives, we often encounter such a phenomenon, such as peaches, pears, grapes, etc., placed there for a long time, slowly "moldy", exuding a fragrant smell of wine. This is mainly a microorganism - yeast credit. Yeast breaks down sugars to produce alcohol and carbon dioxide. This phenomenon is called "fermentation". In ancient times, humans discovered that naturally fermented wild fruits were tasty, so they picked them and stored them, consciously fermenting them into wine before enjoying them. This kind of naturally fermented wine can be said to be the most primitive wine.
The ancient saying goes: "The beauty of Qingdao began with Lei Yue". Strictly speaking, the development of agriculture, food surplus, is the brewing premise. When mankind entered the agricultural society, the forefathers produced grains can not be like sugary wild fruits by the role of yeast in nature and direct fermentation into wine? The answer is: no. Because grains are rich in starch, which must be hydrolyzed into maltose or glucose before it can be liquefied. From the chemical point of view, glucose, fructose, maltose, etc., can be directly by the role of yeast to produce alcohol, which is generally called "alcoholization" in winemaking.
