Preparation method of wonton soup material

Materials: 5 kg of pig bones, old hen 1 hen (or 3 chicken skeletons), 500 g of dried fish and 200 g of dried shrimps.

Seasoning: about 200 grams of salt, sugar and fish sauce.

Wash pig bones and old hens first, then soak them for two hours to remove blood, change water several times in the middle, boil them in cold water to remove blood foam, and then remove them and wash them for later use.

Cut the dried fish into small pieces, stir-fry them in a hot pot until they smell fragrant, and then pour them out for later use. Shrimp does the same thing. Finally, put the fried dried fish and shrimp into a cloth bag and tie it tightly for later use. There is no need to refuel in the process of frying dried fish. Shrimp can be fried dry.

Add 50 kilograms of clear water to the soup pot, add pork bone, old hen, pepper granules and ginger, boil with strong fire to remove floating powder on the surface, and then boil with low fire for 3 hours.

After cooking for 3 hours, add dried fish and dried shrimps prepared in advance, then turn to low heat to keep the noodle soup slightly boiling, cook for 2 hours, and finally add salt, sugar and fish sauce to taste, thus making the wonton soup base.

Making skills of wonton noodle soup base
