How to cook sauerkraut

Prepare a proper amount of big leaf mustard, clean it, and then dry it outdoors to remove water, one day and one night.

Next, when cooking, then save the rice washing water for later use. The function of this rice washing water is to ferment vegetables.

Third step

Next, prepare a clean jar or a large glass container or plastic bottle, remember not to use metal containers, and then disinfect with white wine. Prepare a proper amount of salt for our processed mustard, spread it evenly on the surface, and then knead it. The ratio of vegetables to salt is almost 10: 1. After processing, put it into a jar, and then pour rice washing water and appropriate amount of water. Then put a clean ballast stone in it to prevent sauerkraut from deteriorating due to contact with air. Finally, cover it and put it in a cool place for natural fermentation for about half a month.

Fourth step

After two weeks, you can start cooking some. Remember to put back the ballast stone.

Sauerkraut is a pickled product. Eating for a long time is not good for your health. Eating once or twice a month is very sour.
