Is cast iron pan better than refined iron pan?
First, in terms of manufacturing technology. As we all know, the process of fine iron pot is to melt molten iron, press it into plates, and then make the formed plates into iron pots. Cast iron pot is made by melting iron blocks into molten iron at a high temperature of 1800 degrees and pressing them with a mold. In fact, thin iron pots are also thick, and most of these pots are handmade in wrought iron.
It can be seen from here that the manufacturing temperature of cast iron pan is very high and there are many impurities. The manufacturing temperature of fine iron pot is not so high, but there are few impurities. However, the problem of cast iron pan is brittleness, which is easy to crack when it is hit hard, and the problem of fine iron pan is fast heat transfer.
Second, the problem of paste pot. Cast iron pots may be easier to paste, because the heat transfer is fast, and it is not so easy to paste compared with thin iron pots.
In fact, compared with cast iron pans, refined iron pans have the following advantages:
First, thin iron pots are not easy to paste. Because it is made of pure iron, there are few impurities, so the heat transfer is relatively uniform and it is not easy to stick to the pot.
Second, the fine iron pot can reach a higher temperature. Because of the good materials, the pot can be made very thin and the temperature in the pot can be higher.
Third, the fine iron pot is better to clean. High-quality wok has a smooth surface and is easy to clean.
Of course, both refined iron pots and cast iron pots have their own advantages and disadvantages, and they should be chosen according to their actual needs. So, what do you need to pay attention to when choosing an iron pot?
The first point depends on whether the pan surface is smooth. If there is a small pit in the pot surface, it is recommended not to buy it.
Second, it depends on whether the pan surface is even and thin. Generally speaking, when knocking on the surface of the pot, the louder the sound of the pot, the greater the vibration of the hand, indicating the better the quality.
Third, the rusty pot is not of poor quality, or it may be stored for too long, so it can be cleaned with vinegar.
