Detailed production method of handmade Tieguanyin
1. Picking: The picking time of Tieguanyin tea is usually around Tomb-Sweeping Day, and it is between 9 am and 3 pm. On the one hand, this time period is the peak of tea metabolism that day, and the quality is good; On the other hand, the weather is cooler to avoid the leaves being burned by high temperature.
2. Drying: Tieguanyin, which is picked back, should be dried first, and the tea leaves should be laid flat in the shade to dry. Not suitable for sun exposure, it can be dried.
3. Warm coagulation: put the sun-dried Tieguanyin in a ventilated place with air circulation for warm coagulation, usually for 2-3 hours.
4. Kneading: Tieguanyin kneads, so that the cells of tea are broken and the tea juice is released. Bone-breaking method is the basic kneading method for making Tieguanyin, so we should pay attention to the kneading strength at this time.
5. Drying: Dry the twisted tea indoors for about 2-3 hours to reduce its moisture.
6. Baking: put the dried Tieguanyin into a tea baking furnace for baking, with the temperature controlled between120℃ and150℃, and the baking time is about 20-25 minutes. It is suggested to leave it for several hours after baking to let the tea fully release its aroma.
