What is the relationship between Dingfeng Town in Changchun and Laofeng Town in Harbin?
The font size of "Old Ding Feng" also has a history. According to legend, during the Qianlong period of the Qing Dynasty, Emperor Qianlong of Erxia Jiangnan, after tasting the delicious snacks of a fruit shop in Shaoxing, named this fruit shop "Laofengfeng". Since then, Laodingfeng Fruit Shop in Shaoxing, Zhejiang Province has become famous in China and blossomed everywhere. In Xi, Suzhou, Jinhua, Ningbo, Shenyang, Changchun and other places, there are semicolons of old Ding Feng. These semicolons of old Ding Feng are all linked, and they are linked to the East, not a partnership. Although they operate independently, they can also help each other in business dealings and regard them as a family.
In the early years of the Republic of China, Wang Ada and Xu Xinting from Shaoxing, Zhejiang Province came to Harbin in 19 12 and set up the "Laodingfeng Nanwei Warehouse" in Zhengyang Street, Fujiadian, with the front store and the back factory. The warehouse mainly deals in dry and fresh products with southern flavor and local famous products, while the factory produces a small amount of snacks with southern flavor. At that time, cake workshops in Harbin used hanging ovens to bake food, while old Ding Feng introduced portable stoves popular in the south to Harbin. This portable oven bakes evenly, and the baked snacks have good color and high quality, but the size of the oven plate is small, which is only suitable for baking small batches of fine food.
Harbin residents were not used to eating southern snacks at that time, and the market was full of western-style and Beijing-style snacks. Wang Ada and Xu Xinting are not eager to expand the output of Nanwei snacks to compete with Beijing and western-style cakes, but insist on making fine and excellent Nanwei snacks and putting them on the market in small quantities, so that Harbin citizens can gradually get used to Nanwei snacks. During this period, Laodingfeng Nanweicang mainly engaged in Jinhua ham, Suzhou meat floss, Nanjing dried salted duck, Sichuan bacon, Fujian orange cake, Changzhou melon strips, preserved eggs, tobacco and alcohol, sugar, tea, canned food and other famous products in South China. At the same time, I also made some sausages, stomachs, smoked chicken and other foods. In this way, more than half of the business in early old Ding Feng was wholesale and retail of all kinds of famous products with southern flavor, and the proportion of homemade cakes was very small. The pastry factory seems to be just an ornament of Nanwei warehouse.
In the early 1920s, Lao Dingfeng attracted the interest of Harbin consumers with its unique southern flavor food and well-made southern flavor cakes. Wang Ada and Xu Xinting have been operating in Harbin for more than 10 years, and gradually understand the tastes of Harbin consumers, and consciously produce some varieties that are quite popular with Harbin citizens. In the case that the supply of homemade snacks is in short supply, they have successively added some production equipment, expanded the output, increased the variety of products and improved the production technology of some products. At this time, the front shop and back factory of old Ding Feng have begun to take shape, with more than 30 workers and a house of *** 160 square meters. During this period, the proportion of self-produced snacks operated by Laodingfeng Nanweicang gradually increased, from the main distribution of southern specialties to the main distribution of self-produced Nanwei snacks.
Ding Feng's snacks have always been well-made, because they used to be produced in small batches and put on the counter directly after baking, so there are always customers waiting in line to eat the baked snacks. Over time, this phenomenon has become a compulsory advertisement for dim sum in old Ding Feng, attracting many customers in old Ding Feng. At that time, the traditional products of old Ding Feng were all kinds of moon cakes and trough cakes, long white cakes and hibiscus cakes. There are many kinds of moon cakes in old Ding Feng. There are assorted foods, hawthorn, jujube paste, roses and other varieties in the staple food, and high-grade moon cakes are complete sets of gifts, cakes and Cantonese moon cakes. Ding Feng's cakes are not only unique in appearance, but also superior in taste to similar products. Other manufacturers' cakes are all plum-shaped. The cakes in old Ding Feng have always been peach-shaped, and they are made of natural eggs. They don't need smelly alkali, but they are also brushed with sesame oil, although the price is high.
A few cents higher than other manufacturers, but the population is soft and the fragrance is overflowing. Customers are still willing to spend more money on the cakes in old Ding Feng. In the later period of operation, Old Ding Feng added seasonal cakes, such as fried cakes in spring, cool cakes in summer (cold cakes and mung bean cakes), autumn cakes (various moon cakes) and winter cakes (grooved cakes, long white cakes and hibiscus cakes), which were deeply loved by Harbin consumers.
In the early days of Manchukuo, the business situation in old Ding Feng was relatively stable. Although the Japanese have occupied Harbin, Wang Ada and Xu Xinting believe that they can do business for a long time as long as they work hard, do their duty and cooperate with Qi Xin. Due to the establishment of the Puppet Manchukuo and the inconvenience of north-south traffic, old Ding Feng has not had famous southern flavor products for decades. In order to make up for the business losses, Old Ding Feng correspondingly expanded the production scale and increased the pastry production. In the case of increasing pastry production, snacks in old Ding Feng are still carefully made, without cutting corners. They are strict about quality, and all the passes are strictly controlled.
Old Ding Feng's pastry materials are exquisite, genuine and never sloppy. No matter the main materials or auxiliary materials, there are fixed purchase channels. Preserved fruit, peach kernel, raisin, etc. They are all purchased directly from the place of origin, and there are some key accessories such as rose sauce, sweet-scented osmanthus candy and jujube paste. Insist on self-control In the process of processing, old Ding Feng strictly abides by the principle of meticulousness and works meticulously. Everything that has been oiled must be fried thoroughly. Sesame seeds must be rinsed with clear water and cooked in a pot before eating. Melon seeds and peach kernels should be roasted with low fire before eating. Generally, small materials should be cut evenly, so as to ensure the unique flavor of old Ding Feng cakes. It is another feature of old Ding Feng that the main ingredients are fed in strict accordance with the prescribed standards and efforts are made in baking. Old Ding Feng's dim sum is very particular about dough, and it is said that "sugar is bone and meat, and oil is blood". It is not difficult to keep the moon cakes in old Ding Feng for a long time. The key is to put the right amount of oil according to different varieties, so that the moon cake is hard but not stiff, comfortable in taste and long in flavor. Old Ding Feng has always maintained the advantages of the same industry in baking, the last process of pastry making. Although it was later switched to stewing furnace, it still did not lose its advantage. There is a saying in the pastry industry that the baking technology of "three-part baking and seven-part baking" is directly related to the quality, shape, color and taste of the product. In the long-term practice, the furnace-watching master in old Ding Feng has mastered a set of baking techniques for various snacks. Therefore, in the last process, not only did the product not fade, but also the proper color, taste and shape of various snacks were baked just right.
In the early 1930s, it was the new heyday of Lao Ding Feng. It can produce 1000 kilograms of various cakes every day, and it can be sold out on the same day. At that time, some big stores with good reputation could sell gift certificates by virtue of their word of mouth during festivals (in the past, gifts were paid attention to, and the recipients went to the store to buy goods with gift certificates themselves), so as to expand the influence of stores and products and increase sales. Ding Feng's dim sum has become an indispensable gift for this festival. Every New Year's Day, old Ding Feng will sell several thousand yuan of gift certificates, which not only increases the sales volume, but also attracts many customers for old Ding Feng.
During the five years of the Puppet Kant (1938), the Japanese and Puppet authorities imposed stricter restrictions on national industry and commerce, and the "control" became more and more cruel, and old Ding Feng began to decline. First of all, the Japanese and Puppet implemented the raw material rationing system, and old Ding Feng could only get a bag of noodles and a few kilograms of sugar every day. Only a little noodles can be rationed in the future. Only tens of kilograms of mixed flour biscuits can be produced with this raw material every day. The next step is the pseudo-Kant's eight-year "July 25" price stop order. Managers Wang Ada and Xu Xinting saw that Lao couldn't run any longer, so they checked out and left Harbin one after another, leaving the remaining equipment and real estate to Manager Wang's son-in-law Zhang. At that time, several people in Tieli County and I established the "Yongfadong" business firm, which mainly engaged in wholesale food and department stores from Harbin and other places. At that time, I was stationed in Harbin to purchase goods, because I often ordered from Laofeng, and I got to know Zhang. The following year, Lao Dongji, an old family member, accused the fake policeman of selling canned goods to skin people, which led to Zhang's arrest and imprisonment in July. After Zhang was released from prison, the old economy went bankrupt. At that time, he had no intention of staying in Harbin for a long time, and planned to sell old Ding Feng to me. After much deliberation, I agreed to take over old Ding Feng. After negotiation, I exchanged 50,000 yuan of counterfeit money for a factory, a shop and the rest of the goods in old Ding Feng. After taking over the old Ding Feng, there has been no furnace production because there is no source of raw materials; Take old Ding Feng's shop as a warehouse, purchase goods in Harbin, store them here, and then transport them to Tieli Yongfa East for sale. At this time, Old Ding Feng is actually our permanent office in Kazakhstan. When I received old Ding Feng, my colleagues in Yongfadong disagreed. They think that Harbin is under the strict rule of the Japanese Puppet and is restricted everywhere, so old Ding Feng can't do business at all. But I think old Ding Feng's name is very loud and his position is good. As long as we keep this store and keep this name, one day the war will subside and it will be profitable. I transferred 6.5438+0.5 million yuan of counterfeit money from Tieli Yongfa East to Harbin, bought some surplus goods from factories and closed shops in various waste industries in Harbin, stored them in Laodingfeng, and then shipped them to other places for sale after optimistic about the market. At this point, the old Ding Feng became an empty merchant with a shop name and closed its business. 1945 After Japan's defeat in August, Harbin's industry and commerce began to recover. I saw this was a good opportunity, so I decided to start production and resume Laodingfeng's business. At that time, on the eve of the Mid-Autumn Festival, I was thinking about producing moon cakes, a specialty of old Ding Feng, which would immediately make the name of old Ding Feng resound through Harbin again. In this way, old Ding Feng mobilized from top to bottom, repaired the equipment and recruited laid-off workers in just a few days. I bought flour on credit in Homer Yichang through my relationship, and bought raw materials such as sugar and soybean oil with a loan from Yifa Bank. Around the Mid-Autumn Festival, Ding Feng produced more than 30,000 kilograms of moon cakes, which were sold out on the counter. 1946, I rented two factories in Ma Zhong Road, Daowai, and successively opened the Old Windy Soda Factory and the Old Windy Winery. At that time, the source of wine was abundant. Russian ivory, brandy and wine brewed by Laodingfeng Winery are not only sold in this city, but also transported to Hailar, Heihe, yakeshi, Zhalannuoer and other places in large quantities, which are selling well. During this period, Lao Dingfeng was in the heyday of his business, and accumulated a considerable amount of funds in just one year. At the beginning of 1948, the municipal government made a comprehensive registration of the city's industry and commerce, and issued a notice on the protection of industry and commerce shortly after the registration. The notice pointed out that all industrial and commercial enterprises in this city should be protected from infringement. The industrial and commercial registration shall prevail, and its ownership shall be determined. From March 4th, no one may infringe on their property. Old Ding Feng actively expanded its production with the strong support of the government, but because the supply of raw materials could not meet the processing capacity of the factory, we decided to expand our agency business, operate as old Ding Feng did at the beginning of its business, and make full use of the outlets of old Ding Feng to sell local specialties. At that time, the situation of the people's liberation war was excellent, and the PLA began a strategic counterattack. Following the footsteps of the People's Liberation Army, the old buyers have successively arrived in Changchun, newly liberated Shenyang, and then in Yingkou, Tianjin, Beiping, Nanjing, Shanghai, Guangzhou and other places, and the local specialties that have been blocked for many years have been put on the counter one after another. With the improvement of the economic situation, the production of Laodingfeng pastry factory is gradually becoming normal. After the national liberation, under the protection of the Party's policies and decrees, old Ding Feng continued to grow and develop. During the period of national economic recovery, he tried to supplement the shortcomings of the state-owned food industry, enrich the market and meet the needs of the masses. During this period, Xu Yuduo, an old pastry technician, boldly innovated with the spirit of a master, making the old dim sum varieties constantly updated and welcomed by Harbin people. As far as moon cakes are concerned, Xu Yuduo inherits the tradition and is innovative. He combined the characteristics of Beijing-style, Guangdong-style and Soviet-style moon cakes in one furnace and developed more than 60 sets with 265,438+07 varieties, patterns and shapes. There are more than ten kinds of mooncake skins, such as white skin, scalded skin, egg skin, Shui Pi, hard skin, pulp skin, crispy skin and raw sugar skin. There are more than ten kinds of mooncake flavors, such as fruit flavor, meat flavor, seafood flavor, pepper flavor, bean flavor and strong flavor, and even more than ten kinds of shapes, such as square, pentagonal and fan shape. From 65438 to 0956, old Ding Feng carried out socialist transformation and public-private partnership, and merged with several small factories to establish Harbin Laodingfeng No.3 Food Factory. During the Cultural Revolution, it was changed to Volkswagen Food Factory and Jingyu Food Factory. 1979, old Ding Feng resumed its old name until today.
After the Third Plenary Session of the Eleventh Central Committee of the Communist Party of China, Mrding regarded it as meeting the needs of people's lives and sought development by creating new varieties and new patterns. He successively won the titles of national high-quality products such as Sichuan Crispy Moon Cake and Baiguo Compact Moon Cake, and won the first prize for cakes, crisp fruits and crisp smiling faces, and the first prize for children's cream preserved fruit cakes and four seasons cakes. Old Ding Feng's products are enduring because they pay more attention to scientific formula and unique technology, so the products have diverse shapes, clear patterns, bright colors, even skin stuffing, well-proportioned fruit, delicate and crisp.
Today, Lao Dingfeng has developed into a large-scale food enterprise with registered capital of 654.38+0.2 billion yuan and total assets of 654.38+0.5 billion yuan, ranking first among pastry production enterprises in Heilongjiang. At present, the enterprise has invested1.200 million yuan to build Laodingfeng Food Industrial Park in Harbin Limin Development Zone. In the decades after liberation, Laodingfeng brand cakes won nearly 100 medals awarded by governments and associations at all levels, and the sales market covered Harbin and Heilongjiang 13 cities. For three consecutive years, the products have been exported to all parts of the country through provincial postal express delivery, with an annual output of thousands of tons of cakes, which are deeply loved by consumers. Laodingfeng cake is the best gift for weddings and festivals.
