What is old fat?

Old fertilizer is both yeast and edible alkali.

Edible alkali is not a common condiment, but a food expansion agent and a meat tenderizer. Its function is to make dry raw materials expand rapidly, soften their fibers, and at the same time remove the sour taste in dough. Therefore, edible alkali is generally widely used in food processing, such as noodle processing, bread processing, steamed bread processing and so on.

Proper use of edible alkali can enhance the color, aroma, taste and shape of food, thus enhancing people's appetite. Mix flour with warm water and knead into dough. Boil the dough, sterilize it, put it in a glass bottle, cover it and put it in a sunny place. Note that yeast is an anaerobic bacterium and must be separated from the air. Cover, ferment at room temperature twice, and then ferment at low temperature for 24 hours. When you open the dough with your fingers, you will find many honeycomb-like pores, and the best state is that there is no sour taste.

Cooked noodles can be stored in the refrigerator for about 3 to 4 days, or they can be stored in the refrigerator for one month. Take it out and heat it before use, and mix it into the main dough for later use. Add new ingredients to the rest to make old noodles, and repeat them every time.
