Method for making cold rice noodles

1, first weigh out 2 Jin of flour and make cold noodles with high-gluten flour. Cold noodles made of high-gluten flour have a strong taste and are not easy to rot. Then add a proper amount of water, press the noodles together by hand and put them in a bag to sober up. The time to wake up is 30 minutes.

After 2.30 minutes, add appropriate amount of water, which will be subject to flooding the dough. Press and scrub the gluten repeatedly by hand, take out the washed gluten, squeeze out the water, and then put the gluten into another basin of clean water to continue cleaning.

3. Continue to press and scrub in the water. Just like the first cleaning method, the gluten is washed to milky white and taken out, and the water is squeezed out by hand. At this time, our gluten will be cleaned and steamed in a steamer.

4. The batter water naturally precipitates in the basin for about 6 hours. After 6 hours, the precipitated batter water was poured out. The water is yellow. Try to clean it up, which will affect the color of cold rice noodles. Cold rice noodles will turn yellow if the yellow water is not washed.

5. Add 3-4 kg of clear water to the remaining batter and beat it into milky white. Add a proper amount of black sesame seeds and stir evenly for later use.

6. Add water to the pot. After the water is boiled, brush a little salad oil on the cold rice noodle gong, add a spoonful of batter water, rotate the gong to make the batter even, put it in a pot with boiling water, cover it, cook for one minute, and then take it out. Put the bean jelly gong into a cold water basin, cool it, take it out by hand and put it on a plate, and steam other bean jelly in the same way.
