Preparation method of gypsum tofu

1. Soak soybeans in clear water for 3 hours, not too long.

2. Wash the soaked soybeans and remove the bad ones.

Add 3.100g soybean and 900ml water to make soybean milk. I used a cooking machine instead of a soymilk machine. 200 grams of soybeans should be squeezed twice.

4. The squeezed soybean milk is filtered with gauze to remove bean dregs.

5. Cook the soybean milk for three times, and then turn off the heat.

6. Gypsum is mixed with 100 ml of water. Gypsum can be bought in TB, because gypsum will precipitate quickly, so just do this step before pouring soybean milk.

7. After turning off the fire, the soybean milk is cooled to 95 degrees. Every time you cook, stir for one minute, then rush into the prepared gypsum water and let it stand. Stop stirring. After fifteen minutes, the tofu will be ready.

8. Put the tofu in a tofu box covered with a tofu cloth and press it for fifteen minutes.
