How to make curry sauce
1. Bring stock to a simmer in a small non-stick saucepan. Pour in the curry powder or sauce and bring to a boil over medium heat, stirring constantly with a spoon.
2. Add half a cup of milk, two teaspoons of brown sugar, half a teaspoon of black pepper, and a dash of cooking wine to the boiling curry sauce, and continue to cook (fifteen minutes or more over medium-low heat). For the cooking wine, use regular cooking wine, any brand will do.
3. Make a small bowl of gravy with a little cold water and add it to the boiling curry sauce, stirring gently as it thickens. When the curry juice meets the gravy and turns into a thicker sauce, it is done.
