Thermistor is expensive and nonlinear, which requires complex constant current source servo circuit. Data processing is very complicated. Thermocouple needs compensation circuit, and the material price is high. The above two schemes also need an A/D converter. DS 18B20 only needs three wires and a resistor. Temperature data can be measured without any other peripheral circuits. So the circuit is very simple.
