Zhang Zhongjing was a local official in the Eastern Han Dynasty. One winter was very cold. On the solstice of winter, Zhang Zhongjing wanted to go to the countryside below to see how Pingming people spent the winter. At that time, there was no custom of eating jiaozi on the solstice in winter, but Zhang Zhongjing just wanted to observe people's feelings. Zhang Zhongjing's eyes suddenly turned red when he went to the countryside, because ordinary people could not survive in the cold winter. There are too many people with air leakage, no food and frozen ears. When Zhang Zhongjing saw this scene, he immediately sent someone back to the county to get food, set up a cauldron and wrapped jiaozi.

Jiaozi, in fact, because people's frozen ears are too conspicuous, Zhang Zhongjing simply made pasta into the shape of ears, and in order to drive away the cold on people, he added some vegetables with cold-dispelling properties to the pasta. Thus, jiaozi, shaped like an ear, was invented.

Later, Zhang Zhongjing lamented the suffering of the people all over the world, and simply resigned from his official position to concentrate on studying medicine, treating diseases everywhere among the people and taking medicine for the benefit of the village. So gradually, the legend of Zhang Zhongjing spread in the surrounding towns and villages. People lamented that he was sincere to the people, so he spontaneously invited jiaozi to commemorate Zhang Zhongjing every winter solstice. Although it was poor in ancient times, there was no meat in jiaozi at that time as it is today. At that time, it was just a piece of dough wrapped in some weeds. And this simple and practical food has been handed down.
