What's your favorite food when it's cold?

When it's cold, I like to eat goose stewed in iron pot best.

Spiced goose

1. Pour a proper amount of flour into a basin, add a little salt and 3g yeast, stir the dough with warm water, stir it into flour wadding, knead it into dough, cover it with plastic wrap, and put it in a warm place for fermentation 1 hour.

2. Cut the washed goose into small pieces; Cut green onions into garlic; Sliced ginger; Garlic flattening; Put a few star anises, a handful of pepper, angelica dahurica, white buttons, nutmeg, fragrant leaves and a handful of dried peppers in a bowl for later use; Peel carrots and potatoes and cut them into uniform hob blocks.

3. Boil the water in the pot and pour in the cooking wine to remove the fishy smell. After the fire boils, pour in the meat and cook for about 3 minutes. Boil the blood foam inside to remove the fishy smell, and pour out the goose pieces and clean them.

4. Pour more oil into the pot, add onion, ginger and garlic, stir-fry until fragrant, pour in the freshly prepared aniseed, stir-fry slowly with low fire, add two spoonfuls of bean paste, one spoonful of sweet noodle sauce, one spoonful of soy sauce and black pepper to stir-fry red oil, then pour in the goose pieces, stir-fry over high fire to remove moisture, and pour in white wine until the alcohol is fully volatilized and deodorized, and stir-fry for about 5 minutes.

5. Then cover the pot, boil it with high fire first, and then stew it with medium fire, which takes about 1 hour. Add salt, sugar, monosodium glutamate, chicken powder, thirteen spices and soy sauce, stir well, and simmer until the goose pieces are fragrant.

6. Roll the fermented dough flat, then roll it into a half-centimeter-thick cake, brush it with a layer of vegetable oil, fold it up and down and cut it into wide strips, and twist it for two or three times like a twist.

7. Open the lid, pour in the side dishes, put the freshly made flour cake on the goose block, then cover the lid and heat it for 15 minutes. It's delicious.
