Every April, Maotai makes wine about three times. The third, fourth and fifth rounds of Taiwanese wine brewing are collectively called "Dahui wine", which accounts for more than 60% of the annual base wine production, and is also a round of concentrated production of typical maotai-flavor products throughout the year.

Maotai's seven rounds of wine have their own characteristics. One or two rounds are good at aroma, one of which is strong and the other is fresh. Six or seven rounds of wine are characterized by good taste, mellow and soft; The third, fourth and fifth rounds in the middle are "big drinks", which are just right in taste and have their own characteristics.

Four-round wine, as a medium round wine, is different from the grain flavor of three-round wine and the baking flavor of five-round wine. Four rounds of wine is the most harmonious and clean, and it is a relatively pure maotai-flavor type, which has become the mainstay of Maotai's seven rounds of wine collection.

The second round: colorless and transparent, without suspended matter; It has a sauce flavor, sweet taste, clean aftertaste and slightly sour taste. The concentration of wine is ≥ 54.5% vol

Three rounds: colorless and transparent, without suspended matter; The sauce is mellow and clean. The concentration of wine is ≥ 53.5% vol

Four wheels: colorless and transparent, without suspended matter; The sauce has outstanding fragrance, mellow taste and long aftertaste. The concentration of wine is ≥ 52.5% vol

Five rounds: colorless (yellowish) transparent, no suspended matter; The sauce has outstanding flavor, long aftertaste and slightly burnt taste. The concentration of wine is ≥ 52.5% vol

Six rounds: colorless (yellowish) transparent, no suspended matter; The sauce has obvious fragrance, long aftertaste and slightly burnt taste. The concentration of wine is ≥ 52.0% vol

Seven rounds: colorless (yellowish) transparent, without suspended matter; The sauce has obvious fragrance, long aftertaste and burnt taste. The concentration of wine is ≥ 52.0% vol
